To tell the truth...i really have no idea how to make this pickle...however many thanks to recipes fr the web n blogs....
About 15 kaffir limes....wash and rise. Boil about 3 cups of water and add about a table spoon of salt. When the water is hot enough, dip the kaffir limes around 3-5 minutes.
People use to say that, if we use the brass pot / pan, the colour of the lime will remain fresh and green. Well....looks like my brass pot is not included.. :-)


While it is still hot, pick the lime and put in a glass jar (around 4-5 limes per jar...depend on the size of course), leave the remaining water. In the glass jar, pour the vinegar (I used the
nipah vinegar = palm tree) and add about 2 table spoon of sugar. Let it cool and keep it for couple of months. Void direct sunlight....
